You’ll never buy a Ginger Nut again once you’ve mastered these. Go on try them and don’t forget to make them your ‘own’

Ginger biscuits
These little babies are a sure thing. I can guarantee that you can have a batch made before you can bob down to the shops to buy some.
As always I encourage and urge to ‘own’ these by mixing in additions and exchanging ingredients.
Eg. Exchange the golden syrup for honey, black treacle or even molasses.
The flour for wholemeal flour or taking out some of the flour and adding say 50gms oats.
Ingredients
110g Self Raising flour
1 rounded teaspoon ground ginger (add more if you like them a bit spicier)
1 teaspoon bicarbonate of soda
25gms sugar
50gms margarine
50gm or 2 tablespoons of golden syrup
Method
Pre heat the oven to : gas 5, 375f or 190c
Sift all the dry ingredients into a bowl
Rub in the margarine and
Add the sugar and mix
Stir in the syrup
Bring the mixture together with your fingers until you have a soft ball
Grease a baking tray break of walnut size pieces and put them on the tray leaving a gap between as they will spread.
Bake in a pre heated oven for 10 -15 minutes, leave on the tray for a couple of minutes before transferring to cooling rack.
Try these additions: chopped nuts, chocolate chips, chopped crystallised ginger; dipped in chocolate ………… the list goes on.
