Healthy Banana loaf? unless you spread it with lashings of butter!!!

Banana and Hazelnut loaf

There are many variations of banana loaf, cake or bread out there. Here is mine. I used wholemeal flour and these fashionable coco chips to bring a touch of ‘healthiness’. You can use all nuts and vary by using walnuts, pecans or Brazil nuts. You can always cancel out any healthiness by spreading a slice with lashing of butter!!!!

Ingredients

1 large banana peeled and mashed

1 medium egg beaten

1tsp vanilla extract

75 mls milk

50g melted butter

150g Wholemeal self raising flour

½ tsp of baking powder

75g dark brown sugar

50g roasted chopped hazelnuts (you can buy these)

50g Coco nibs (optional) If not using increase the chopped hazelnuts to 100g

 

Method

Pre heat oven to 170c gas mark 3. Grease and line a 1lb (450g) loaf tin

In a bowl mix the banana, egg, vanilla, milk and melted butter.

Mix in the sugar.

Measure the flour, baking powder and mix into the wet ingredients.

Gently mix in the nuts and coco chips.

Spoon the mixture into the tin level the top and bake for 45minutes, or until a skewer comes out clean when inserted into the centre.

For best result wrap the cake in greaseproof paper and store for 24 hours before eating
