Here’s an easy but effective tasty treat to serve with a chilled glass of wine over the Easter Celebrations

Parmesan Shortbread.

 

2 cup self raising flour

2 cup parmesan cheeses grated

240gms soft butter

Dried mixed herbs  (optional) or try:

Lemon zest and black pepper

Chilli flakes

chopped parsley

The options are endless.

 

Blitz the flour butter and cheese in a processor until forms a soft ball, or work together using your hand wrap in cling film and chill.

Roll out the mixture till 4mm thick and cut out discs using a 4cm cutter. Place on a lined tray, bake at gas 6 /200c for 8 minutes or until just turning light golden.

Be gentle with these as they are very delicate but so tasty.

    Want to make these Sandy but what weight is a cup?? Btw the s at the beginning of my email address should be in lower case!!

      Hi Sally
      A cup is about 6oz or 150gms but as long as you keep the cup the same size about the size of a breakfast cup or cappuccino cup it will be fine.
      Try some additions too I’ve put mixed herbs in and also a touch of chilli flakes.
